I keep reading about borrowing chords from parallel modes but it never clicks. Can someone give the simplest possible explanation with an example in C?

    Borrow a chord that 'belongs' to C minor while you're in C major. The classic is the bVI (Ab) — instant cinematic.

    Try C → Ab → F → G. That Ab is the borrowed one. You've heard it in a thousand songs.
